Homemade Granola Bars!

The other day my friend Amanda and I decided to take a stab at making our own granola bars!
We really weren't sure about how they would turn out, but we ended up being so impressed with the end result that I had to share it with you all!




What you need:
+ 4 cups of whole oats
+3/4 cup raw almonds
+ 3/4 cup raw cashews
+ 1/2 cup raw pumpkin seeds
+ 1 cup of dried cranberries
+1/3 cup sesame seeds
+ 1/2 cup brown sugar
+1/4 cup honey or agave 
+ 2 cups dates
+ 1/2 cup coconut oil
+1 1/2 tablespoon of vanilla extract 
+ 1/2 teaspoon of sea salt



Directions:
+ Place 1 1/2 cups of oats in food processor and pulse until finely ground.

+Place 2 cups of dates in food processor and blend into a paste.

+ Place the ground and remaining whole oats, nuts, seeds, and dried food into mixing bowl and mix.

+ Put brown sugar, agave/honey, date paste blend, coconut oil, vanilla, and salt in sauce pot and bring to boil. Stir constantly so that it doesn't burn. 

+Once the mixture becomes soft (it'll take a good 5 minutes) pour into the large mixing bowl with nut/seed mixture.

+Mix extremely well. You may feel that you didn't use enough dates at first but keep mixing and you will be fine. Place mixture in 13x8 rimmed baking sheet that has been sprayed with pam.


Store your bars in a cool place where they don't see much light or the refrigerator! They keep for two weeks.

+Refrigerate for an hour or two and then enjoy!!
